Here is a cheater apple pie - works especially well if you have some scraps of pie dough laying around (I think this dough was left over from a pot pie I made).
Make up a batch of chunky applesauce (or pull some out of the fridge and warm it up)...serve with a scoop of vanilla ice-cream and cinnamon/sugar "cookies" made from pie dough.
Less dough means less calories.
Not sure it was as good as my faux blueberry crisp - but beggars can't be choosers.

That looks tasty! I like the idea of simply a cookie rather than all that pastry in a proper pie. I usually give my crust away anyways so this is a great idea. :)
There she is again.. that Cairo Typo... big can o'whoop ass LuLu style heading her way.... cheeky monkey, commenting all over the blog world... I like that idea.. because I am too lazy to make pie... but I like making stewed apple.. and I like icecream... but haven't eaten any since being in Cairo.. wow a year without ice cream... now there is a blog post.
